Frittata

Ingredients

  • Egg 3

  • Potato 2 med

  • Mint 15 ml

  • Onion 1 med

  • Oil - Vegetable 15 ml

  • Pepper - Red 1 sml

  • Pepper - Green 1 sml

  • Ham - Prosciutto 3 slices

Preparation

A Frittata is like an open-faced Omelet. Make sure you use a pan that can go under the broiler.

  1.If you have cooked potatoes use them, otherwise wash the potatoes and put them in the microwave for 5 minutes on high to cook.
  2.Slice the potato into flat disks. Seed and slice the peppers. Chop the mint. Slice and chop the onion.
  3.Slice the Prosciutto into thin ribbons.
  4.Break the eggs into a bowl and beat adding salt and pepper to taste.
  5.Set a broiler proof frying pan on medium, add the oil and then to onion and garlic. Fry for 3 minutes. Add the potatoes, pepper and prosciutto and fry for an additional 5 minutes.
  6.Turn the broiler on - to medium if your broiler allows it.
  7.Reduce heat to medium low and pour the eggs over the Potato/pepper mixture stirring slightly to let the egg reach the pan base. Let cook 3 minutes.
  8.Remove the pan from the stove and place under the broiler - approx 4 inches (10 cm) for 2 to 3 minutes.
  9.To serve run a knife around the outside edge to loosen, the quarter with a spatula and lift out.
