Preparation
1.Boil water. Stir in rice. Turn heat to low. Cover.
2.Cube Eggplant. Sprinkle with salt & pepper. Set aside in a strainer.
3.Peel, slice and chop the ginger.
4.Trim the root of the green onion and slice.
5.Trim the fat of the meat and slice thinly across the grain.
6.Core, seed and thinly slice the red pepper.
7.Put a Wok on a burner set to high, add oil and when warm add the meat egg plant. Cook, stirring occasionally until the eggplant is cooked 3 - 5 minutes. Set aside in the strainer again
8.And a bit more oil then the meat and peppers. Cook until the meat in starting to brown.
9.Add the ginger and cook for a minute. Then add the black bean & garlic sauce. Stir and cook for another minute.
10.Add the Scallions, cook for a final minute the serve over rice.
