Preparation
Caramelizing onions takes about an hour. You can do other things while its cooking, but you have to stir it every 10 minutes of so.
1.Slice the onions thinly, and then cut each round in half.
2.Put a pan on a low burner, add 2/3 of the butter and then the onions. Cook, stirring occasionally for about an hour - until the onions are very soft and nicely brown. About 10 minutes before you are going to take then off the burner add the sugar and stir. When done remove and set aside.
3.Put a large pot of water on. When boiling add the fettuccine.
4.Cut the ham into thick julienne.Turn up the heat under the onion panto medium after and add the ham stirring until the ham is browned. Add the sesame oil and continue cooking about 3 minutes. Remove and set aside.
5.Slice the zucchini first in half then in ribbons. Cook until tender crisp in the ham pan when the ham is removed.Set aside when done.
6.Turn the heat to low. Add the remaining 1/3 of the butter then the flour stir to make a paste - cook for a minute then pour in the wine a bit at a time, first making a thick paste then thin before adding the remaining wine.
7.Stir in the cream, and add the onions, ham and zucchini. Add the nutmeg, salt & pepper to taste and stir.
8.Drain the pasta.
9.Serve pasta smothered with ham onion sauce and sprinkled with Parmesan.
