Preparation
I use grilling steak (strip loin) because it allows for 1 hour marinading time, while still producing tender meat when cooked. You can use skirt, flank or round but the marinating time hast to increase - to 4 hours or more - to tenderize the meat.
There are 5 steps to this recipe: marinading the meat, making the salsa, making the guacamole, and preparing the garnishes for serving and of course the final cooking. Each of these steps takes about 5 minutes.
1.Cut the onion in half, chopping one half coarsely for the marinade and the other finely chopped, 3/4 for the salsa and 1/4 for the Guacamole.
2.Core and seed both tomatoes, chopping one into a medium dice for the salsa and cutting the remaining one in half. One half is finely chopped for the guacamole, and slice the other half into sections for garnish.
3.Divide the salt evenly 1/2 for the guacamole and the other for the salsa.
4.Finely chop a small handful of cilantro - using 1/2 in the guacamole and the other 1/2 in the salsa.
5.Finally divide the lime juice reserving 80% for the marinade and the remaining 20% split evenly between the guacamole and salsa.
6.To make the marinade add most of the lime juice and the Tequila, vegetable oil, cumin, oregano and pepper to a bowl. Add the coarsely chopped onion. Trim the meat of fat and slice into thin pieces across the grain. Add to the marinade, stir so the meat is well coated. Set aside for an hour or more.
7.To make the Salsa add the medium diced tomato to a bowl, add 1/2 the finely chopped onion and half chopped the cilantro. Finely chop a hot pepper (use your favorite or whats available) and add. Pour in one half of the remaining lime juice and half the salt stir and set aside.
8.To make the Guacamole, put the flesh from 2 avocados into a bowl, add the remaining lime juice and mash into the avocado making an lumpy paste. Add the remaining finely chopped onion, cilantro, seeded tomato and salt and stir to mix.
9.Prepare the garnish by tearing lettuce leaves into strips, slicing pepper, tomato and green onion into serving pieces. You can also add sprigs of cilantro.
10.Set 2 large frying pans on burners, one set to low for heating the tortillas, and one set to medium high to cook the meat.
11.Add a bit of oil to the pan on high, When hot add marinaded meat so each strip has free space around it. Cook until both sides have some crispy bits.
12.When the meat is done place a tortilla into the other pan, let cook for a 30 second, flip and serve.
13.Each person can assemble their fajita out of the ingredients.
