Preparation
Meat Loaf makes wonderful sandwiches - so I usually double the recipe - as I've done in the video.
You'll need a loaf pan.
1.Turn the oven on to 375F
2.Chop the onions coarsely, dividing into 3/4 and 1/4 piles. Further chop the 1/4 pile finely.
3.Cut the bread into cubes and put in a bowl. Add the milk.
4.In a large bowl, add the meats, larger pile of coarse onions, egg, ketchup, Worcestershire, dijon, bread, and salt& pepper to taste. Mix well. Put into the loaf pan and put in the oven for 40 minutes.
5.After 10 minutes peel the potatoes, put into a pot and then onto the stove to boil.
6.To make the mushroom sauce, slice the mushrooms. Put a frying pan on medium-high, add butter and then the mushrooms - in batches so they are not crowded - turning when well browned. Reserve.
7.Add the finely chopped onions to the frying pan. Cook until soft.
8.Turn down the heat to low. Stir in the flour, let cook for a moment, then add the beef stock - a little at a time to make a paste first - then a sauce. Return the mushrooms and let warm.
9.Check the meat loaf - you may need to drain the fat off - which can be done by using a pot lid to stop the meat loaf from falling out and draining into a can or jar.
10.Check the potatoes - if they are done, drain, and cover.
11.Put the peas microwaveable container - to ready for cooking.
12.When the meat loaf is done (there will be no more fat, and it will be well browned on top) Slice thickly.
13.Plate the meat loaf. Top with the mushroom sauce, and add potatoes and cooked peas.
