Preparation
If you are starting with frozen pizza dough you'll have to let it thaw first - which can take some time.
1. Peel and slice the onion.
2. Put a frying pan on low, add butter and then add the sliced onion. Cook on low until brown - about 20 minutes.
3. In another frying pan on medium add the Italian sausages and cook until done. Set aside.
4. Turn the oven to 450.
5. Slice the mushrooms, reserving 1/2 for the salad and sauteing the other 1/2. In a frying pan on medium add oil and butter, then add the mushrooms. cooking until brown on one side before turning over.
6. Quarter the olives. Remove the stone and set aside.
7. To make the sauce, open the commercial pizza sauce - remove about 1/3 to a bowl. To that add the Parmesan, pepper, thyme and chopped basil to taste - about 1 stem typically.
8. Cut the pizza dough in half. Flour the work surface and roll out with a rolling pin, and stretching with your hands if necessary. Free from the work surface if it sticks, adding more flour if necessary. You may notice that it contracts when freed - this is normal - continue to roll out & make thin ans the dough will thicken (rise) when cooking.
9. When rolled out, spread some sauce on 1 half leaving about a finger width at the edge free of sauce - you'll need this to join the halves. Layer on the toppings you desire the fold the un-topped half over topped half. To seal roll the edges over eadh other and pinch.
9. Transfer to a cookie sheet or pizza tray and put in the oven for 15 - 18 minutes or until browned.
10. While the Calzone's are cooking was the lettuce, dry and tear into small pieces to make the salad base.
11. Peel and thinly slice the red onion, chop and sprinkle on the lettuce. Layer on the mushrooms. Core and slice tomato and layer it on as well.
12. When the calzone's are ready plat with the salad - Do not bite into the calzone's immediately (though that is tempting) they are very hot.
