Beef Hash and Eggs

A fantastic hash of eggs, beef and potatoes.

Ingredients

  • Beef - Cooked 350 ml

  • Potato 4 med

  • Egg 4

  • Onion 2 sm

  • Bacon 5 strips

  • Cream 20 ml

  • Thyme 3 ml

  • Salt and Pepper 1 to taste

Preparation

  1. Peel an coarsely dice the potatoes, boil until cooked the dice finely.
  2. Peel the onion, slice and quarter then slice and quarter.
  3. Dice the beef.
  4. Put a frying pan on medium, add the bacon and cook until slightly crispy.
  5. Add the onions and cook until soft, then add the potato and cook until crispy.
  6. Add the diced beef and cook - the add the thyme and salt and pepper to taste.
  7. Pour cream evenly over potatoes, stir lightly and let cook a minute.
  8. Turn down heat to medium low, break eggs into each quadrant, cover and cook until eggs done.
