Hungarian Cauliflower

A Hungarian version of Huevous Rancheros

Ingredients

  • Cauliflower 1 sm

  • Onion 2 sm

  • Butter 15 ml

  • Paprika 10 ml

  • Tomato 1 lg

  • Pepper - Red 1 sm

  • Salt 3 ml

  • Sour Cream 45 ml

  • Flour 8 ml

  • Water 30 ml

  • Egg 4

  • Bread 4 slices

Preparation

  1. Put water in the bottom of pot large enough to hold the cauliflower, put a steamer unit then the cauliflower and steam for about 10 minutes.
  2. Chop the onion. Core, de-seed and slice the pepper. Core, de-seed and coarsely chop the tomato.
  3. Put large frying pan on medium, add the butter and then the onion. Cook until soft.
  4. Stir in the paprika then 1/2 the water. Then add the tomato, and green pepper and the salt.
  5. Stir in the flour, and sour cream and the second half of the water.
  6. Remove the cauliflower and break into flowerettes. Stir into the tomato pepper mixture and cook 5 minutes or so.
  7. Put another frying pan on medium, when warm add eggs and fry as desired.
  8. Put toast on.
  9. To serve generously ladle the cauliflower mixture, top with fried eggs and side with toast.
