Preparation
Don't let the ingredients scare you - this is delicious and could easily become a favorite comfort food with it's mix of sweet, salty and touch of hot flavors. It's also very fast.
1. Peel the potatoes and cut into small cubes. Put on to boil.
2. Peel, slice and coarsely chop the onion. Put the garlic in a press.
3. Slice the cabbage and then cut across the slices.
4. Trim the skin off the kielbasa, the cut into thick rounds. Quarter the rounds.
5. Put a frying pan on a burner just less than medium, add bacon and cook until lightly crisp. Remove but keep the drippings.
6. Add the chopped onion and press the garlic into the drippings. Cook until soft.
7. Add the chopped cabbage and stir then add the water, Balsamic vinegar, sugar, salt and hot sauce. Cover and let cook 10 - 12 minutes.
8. Chop the cook bacon coarsely.
9. Add the chopped bacon and kielbasa to the cooking cabbage. Stir, cover and cook for 5 minutes more. (add water if necessary)
10. Drain the potatoes, and mash. Add the butter, milk and pepper and mash well.
11. To serve make a pancake of potatoes on a plate, top with the cabbage mixture.
