Preparation
1. Peel and very finely chop the onion.
2. Core and half a tomato, remove the seeds and juice and slice into small pieces.
3. Chop the cilantro.
4. In a bowl add the mayonnaise, chopped onion, tomato, cilantro, hot sauce and salt. Mix well.
5. De-shell the shrimp.
6. Put a frying pan on burner just below medium. When warm add the butter and then the shrimp. Cook for a minute to a minute and a half. Turn and cook until done - about another minute.
7. Remove to a cutting surface. Set aside 2 shrimp per avocado, and chop the rest coarsely.
8. Add the chopped shrimp to the mayonnaise mixture and stir.
9. Cut the avocados in half, remove the seed and spoon in the shrimp mayonnaise mixture. Top each half with a whole shrimp.
