Green Eggs and Ham

Ingredients

  • Egg 5

  • Ham - Prosciutto 4 slices

  • English Muffins 2

  • Spinach - fresh 1 bag

  • Garlic 1 clove

  • Lemon 1

  • Wine - white 30 ml

  • Butter 30 ml

  • Flour 15 ml

  • Milk 80 ml

  • Basil 45 ml

  • Cheese - Parmesan 20 ml

  • Salt and Pepper 1 to taste

Preparation

  1. Peel the stems from the spinach. set aside.
  2. Put the garlic in a press.
  3. Cut the lemon in 1/2 and juice.
  4. Pull the leaves form the basil and finely chop.
  5. Take one fifth of the eggs and separate, reserving the yolk.
  6. Separate the prosciutto.
  7. In a small sauce pan on a low burner add 1/2 the butter, let melt then sprinkle on the flour and let cook a minute. Pour in the milk a bit at a time to make a thick paste then a thin before add the remainder and whisking well. Add the reserved yolk and mix well, then the add between a third and 1/2 of the lemon juice. Add salt and pepper to taste then stir in the basil. Keep warm on a very low burner.
  8. Fill a frying pan 3/4 full with water and put on a medium burner. Set a oven rack on the second level from the top and turn the broiler on. Put a large heavy pan on a low burner.
  9. Toast the English muffins. When done butter, lay on whole basil leaves. Fold on Prosciutto then sprinkle on Parmesan Cheese. Put on a cookie tray and when put under the broiler after the spinach & eggs are started.
10. Put the remaining butter in the large heavy pan, then crush the garlic into it. Let cook a minute then put in the remaining lemon juice and the wine. Let cook down a bit then add the spinach, stir to coat and cover.
11. When the frying pan is at an early boil (bubbles hang at the bottom of the pan and drift up slowly) break the eggs into it. Do this by breaking the egg on the sides of the pan and pulling the shell apart just over the water and letting it slice in. Fresh eggs will hold their shape nicely. Spoon hot water over the hasten the cooking and finish the top.
12. Remove the ham and English muffins from under the broiler.
13. To serve lay a layer of spinach on the plate big enough for 2 eggs. Slide a spatula under each egg, lift out of the water and drain by holding against the edge of the pan. Place on the spinach. Top the eggs with the egg/basil sauce. side with the ham and English muffins.
