Preparation
1. Peel the potatoes, cube and put on to boil. Mash with butter, and milk when done.
2. Trim the stalks off the chard. Slice into strips if thick. Tear the leaves into bite sized pieces.
3. Put garlic in a press.
4. Pepper the grilling steaks.
5. On a low medium burner, put a large pan. When warm add butter and then the chard stalks. Cook about 5 minutes. Add the leaves and cover. Turn the heat off.
6. On a medium burner, put a frying pan, add butter and then the steaks. Press the garlic beside the steaks. Cook until well browned on one side. Flip and cook until dome to your taste.
7. Turn the heat to low. Pour in the Madeira and reduce.
8. Stir in the cream and let thicken. Then stir in the mustard.
9. Slice the beef thinly across the grain.
10. To serve, put a small mound of chard, top with slice beef then pour on the mustard sauce. Side with mashed potatoes and sliced tomato.
