Preparation
You wouldn't think that grilling a grilled cheese sandwich is worth the effort - but it is - a nice smokey flavour enhances the cheese.
1. Start the BBQ.
2. Lay the bread out. Top with a layer of goat cheese. (there is no need to butter the bread, in fact it's preferable not to as the butter causes flares)
3. Lay on the roasted peppers.
4. Slice the tomato thinly. Remove the watery seeded area. Put on top of the peppers.
5. Lay on the cheddar.
6. Evenly spread on the chili garlic sauce.
7. Pepper to taste.
8. Test the BBQ temperature. You want even cool, coals. You should be able to hold your hand just above grate level for a count of 4 or 5. If not cover to reduce air and heat.
9. When ready place the sandwich on the grill, and replace the cover. Check after a minute or two. Leave until nicely toasted and the cheese in melting. Flip and re-cover the BBQ.
