Preparation
1. Put garlic in a press. Peel, slice and chop the ginger.
2. In a bowl mix the oil, soy sauce, lemon juice, coriander, cumin, garlic and ginger. Mix well.
3. Slice the meat across the grain and add to the marinade coating well. Let sit in the refrigerator for an hour.
4. Peel the potatoes and sweet potato. Put on to boil. let boil about 15 minutes - Drain then coat with olive oil.
5. Trim the ends from the beans. Core and thinly slice the peppers. Put into a bowl and coat lightly with olive oil.
6. Soak the skewers in water.
7. Start the BBQ.
8. Cut 1 or 2 thick slices off the pineapple. Cut off the skin, core then cut into bite sized pieces.
9. Thread the meat onto the skewers, alternating with pineapple according to your taste. Set aside.
10. Preheat the oven to 175 (to keep things warm as they become ready).
11. Put a mesh basket on the BBQ, Pour in the potatoes and turn frequently. Cook until done - keep warm.
12. Pour in the beans and peppers and cook until both are done. Keep warm.
13. Place the skewers on the BBQ and turn frequently until the meat is nicely browned.
14. To serve plate the beef, potatoes and beans/peppers.
