Huevous Rancheros

A delicious blend of eggs, cheese, peppers, tomatoes and spices.

Ingredients

  • Egg 4

  • Bread 2 slices

  • Cheese - Cheddar 70 g

  • Tomato 1

  • Onion 1

  • Garlic 1 cloves

  • Peppers - Red Roasted 1 jar

  • Chili Garlic Sauce 3 ml

  • Cilantro 13 ml

  • Cumin 1 ml

  • Salt and Pepper 1 to taste

  • Oil - Olive 1 ml

Preparation

This isn't authentic, but it's tasty.

You can buy Roasted Red Peppers at most grocery stores, or do your own on the BBQ.

  1. Peel, thinly slice and chop the onion.
  2. Put garlic in a press.
  3. Core the tomato, slice and chop.
  4. Slice the roast red pepper. (You can use jarred roast pepper, or do you own on the BBQ)
  5. Chop the cilantro.
  6. Slice the cheese.
  7. Put a frying pan on a low burner, add oil and the onion, cook slowly until soft.
  8. Press in the garlic and cook a minute or two.
  9. Turn the heat to high low, and add the tomatoes, peppers, cilantro, cumin chili garlic sauce, salt and pepper to taste and a bit of pepper juice to suit the consistency you desire (this also adds sweetness). Cook slowly, about 15 minutes for the flavours to develop.
10. Meanwhile fill another frying pan with water and put on high burner. As soon a bubbles form turn the heat to medium low.
11. Break the eggs into this. Let cook a few minutes. Occasionally spoon water over the eggs to hasten cooking and finish the tops.
12. Toast the bread.
13. To serve, place bread on plate top with cheese, then the tomato sauce then the eggs.
