Preparation
1. Put water for pasta on to boil. When boiling add the pasta.
2. Slice then chop 1/2 the tomatoes.
3. Slice the roasted peppers into strips.
4. Crumble the blue cheese.
5. Put a pot on a low burner. Add the butter, let melt, then the cheese. Stir as it melts.
6. Add the chopped tomato and stir. Cook until the tomato begins to break down.
7. Turn the heat to medium and Pour in the stock and Cream. Stirring constantly heat to an almost boil. Set aside.
8. Slice the feta into thin strips.
9. Slice the remaining tomato into bite sized pieces. Lay some on each plate then lay spinach on it. Drizzle with olive oil. Lay on some roasted peppers the a slice or two of feta.
10. Drain the pasta and pour in the blue cheese sauce. Mix.
11. To serve spoon the pasta beside the prepared salads.
