Preparation
1. Zest the orange. Chop.Set aside zest. Juice the orange.
2. Chop the ginger into thin sticks.
3. Chop the cilantro.
4. In a bowl add the orange juice, ginger, and cilantro. Add the salmon, turning to coat. Refrigerate for 30 minutes.
5. Peel and chop the garlic.
6. Quarter the leek lengthwise and slice.
7. Core, slice and chop the tomatoes.
8. On a low burner add oil and the garlic. Brown slightly then add the leek and cook until soft. Add the tomatoes, orange zest and salt and pepper to taste.
9. Put water for pasta on to boil.
10. Peel and trim the ends off the green beans.
11. On an low burner put pot, then add butter then wine, the add the green beans.
12. Put the pasta in the boiling water.
13.Put the ground almond on a plate. Remove the salmon from the marinade. shake off excess ginger and OJ then lay the salmon on onto the almonds, then turn to coat the other side.
14. On a medium burner put a frying pan, add oil then the salmon - cook until done.
15. To serve plate the salmon then add pasta topped with the orange tomato sauce. and side with green beans.
