Preparation
1. Peel, slice and chop the ginger
2. Trim the end form the spring onion and chop.
3. Peel the garlic and put in a press.
4. In a bowl put the spring onion, ginger garlic. Then add the sesame oil, soy sauce, fish sauce, chili-garlic sauce, cilantro and lime juice.
5. Add the meat. Pierce with fork to let the marinate penetrate. Turn, pierce again and refrigerate for 30 minutes.
6. Peel the mango, remove the core, slice into thin strips.Lay out on a plate with bean sprouts, basil leaves, spring onions and watercress sprigs.
7. Grill the steak to your taste then slice into thin strips across the grain.
8. To serve lay a tortilla or moistened rice paper on a plate. Lay on strips of steak and condiments to your taste. Roll.
