Indian Wings and Potato Salad

This is inspired by yogurt based tandoori marinades and the flavors from samosas.

Ingredients

  • Chicken - Wings 600 g

  • Yogurt - Plain 150 ml

  • Cilantro 15 ml

  • Onion 20 ml

  • Ginger 20 ml

  • Lime - Juice 15 ml

  • Cardamon - ground 3 ml

  • Turmeric 3 ml

  • Cumin 3 ml

  • Cloves - Ground 3 ml

  • Cayenne Pepper 1 ml

  • Paprika 6 ml

  • Salt 3 ml

  • Potato 4

  • Peas - Frozen 125 ml

  • Onion 1 sm

  • Carrot 1 sm

  • Curry Powder 5 ml

  • Beans - Green 100 g

  • Oil - Vegetable 3 ml

Preparation

  1. Chop the cilantro.
  2. Peel and grate the onion.
  3. Peel and chop the ginger.
  4. In a bowl mix the yogurt, cilantro, onion, 1/2 the ginger, lime juice, cardamon, turmeric, cumin, coriander, cayenne pepper, paprika, salt. Stir and add the wings coating well. Refrigerate at least 30 minutes.
  5. Peel the potatoes. Cube and put on to boil.
  6. Start the BBQ.
  7. Peel and chop the onion - and carrot.
  8. In a frying pan on a medium low burner add oil, then the onions, carrots and the remaining ginger. Cook until soft.
  9. Add the curry powder and stir.
10. When almost cooked - drain the potatoes and them and the peas to the onions and curry. let cook on a low burner.
11. Cut the ends off the beans and rub in oil (and lime juice and salt if you wish).
12. Remove the wings from the marinade and BBQ - turning frequently until done - about 10 - 15 minutes. Keep warm when done.
13. Clean the grill and place a mesh basket - and add the beans to it and cook stirring frequently.
14. To serve Spoon the potato salad on the plate, lay on the desired number of wings and side with green beans.
