Beef, Bamboo Curry with Lime Leaf

A delightful beef curry with a traditional Thai taste.

Ingredients

  • Beef - Grilling Steak 400 g

  • Oil - Vegetable 15 ml

  • Curry Paste - Red 20 ml

  • Coconut Milk 250 ml

  • Sugar - White 7 ml

  • Fish Sauce 15 ml

  • Bamboo shoots - canned 5

  • Lime Leaf 4

  • Rice - White 250 ml

  • Water 500 ml

Preparation

  1. Put water for rice on to boil, when boiling add the rice, cover and turn the heat to low.
  2. Open the can of bamboo shoots. Remove 5 or more. Quarter lengthwise then slice.
  3. Slice the beef across the grain then cut into bite sized pieces.
  4. Cut the stem section from the middle of the lime leaf then cut across the leaf into very thin pieces.
  5. Put a frying pan ton to medium low. Add the oil then the curry paste and cook until fragrant.
  6. Pour in 1/2 the coconut milk, stir and let cook until it thickens and bubbles.
  7. Add the beef and stir to coat.
  8. Add the fish sauce and sugar and stir.
  9. Add the bamboo shoots.
10. Let cook until the meat is nearly cooked then add the remaining coconut milk and 3/4 of the lime leaf and let finish cooking.
11. To serve spoon rice into bowls, top with the curry then sprinkle on some of the remaining lime leaf.
