Italian Sausage Pasta Salad

Pasta salad makes a fast flavorful meal.

Ingredients

  • Pasta - Macaroni 250 ml

  • Olives - Kalamata 125 ml

  • Onion - Red 50 ml

  • Basil 10 ml

  • Peppers - Red Roasted 80 ml

  • Egg 1

  • Sausages - Italian 1

  • Mayonnaise 80 ml

  • Vinegar - Shallot 10 ml

  • Nut - Pecan Pieces 40 ml

  • Pepper 1 to taste

Preparation

  1. Put water for pasta on to boil. When boiling add the pasta. When done drain.
  2. Put an egg in a small pot of cold water - then bring to a boil. Let boil 6 minutes. When done run under cold water.
  3. At the same time put a frying pan on medium and a bit of oil and the sausage. Cook till done. Set aside to cool. When cool slice into thin rounds.
  4. Quarter the olives and de-stone.
  5. Remove the peppers from the jar and slice into strips if necessary
  6. Peel the red onion, thinly slice then finely chop.
  7. Chop the basil.
  8. In a bowl add the mayo and shallot vinegar. Mix well.
  9. Shell the egg and quarter.
10. In a large bowl add the pasta, sliced sausage, chopped onion, peppers and egg. Add the mayo and shallot vinegar mixture and mix well. Pepper to taste and add the pecan pieces.
11. To serve spoon into bowls.
